Beetroot Hummus

I absolutely love beetroot and Hummus so what could be nicer than my two favourite ingredients combining to make a very healthy snack. I always find that home-made tastes so much nicer than shop-bought hummus and

So healthy and nutritious. But why is BEETROOT so good for us:

Beetroot provides Detoxification Support 

Beetroot is rich in Valuable Nutrients…immune-boosting vitamin C and essential minerals like potassium and manganese and folate.

Ingredients for Beetroot Hummus:

1 roasted beet or 2 small vacuum-packed beets

1 can cooked chickpeas, mostly drained

zest of 1 large lemon

juice of 1/2 a large lemon

healthy pinch salt and black pepper

2 large cloves garlic, minced

2 heaping Tbsp tahini

1/4 cup extra virgin olive oil

1 roasted beet or 2 small vacuum-packed beets

1 can cooked chickpeas, mostly drained

zest of 1 large lemon

juice of 1/2 a large lemon

healthy pinch salt and black pepper

2 large cloves garlic, minced

2 heaping Tbsp tahini

1/4 cup extra virgin olive oil

Method:

My advice to make it the most creamy consistency is to add tahini and lemon juice first to a food processor to produce a lovely creamy paste.

Then add the ingredients one at a lime, giving each a minute or so before adding the next one.

Reserve a little of the liquid from the tinned chickpeas and add as the very last ingredient (just a few spoonfuls will do) and season to taste.
